United by a common vision of showcasing the best of local produce simply because it is so fabulously good, many have taken huge risks to establish a  standard of seafood cuisine that others might consider 'unnecessary' for such a rural part of Scotland. All of them believe that a crucial part of any vacational experience is the atmosphere surrounding the food that we eat on our travels.
